How To Make Seared Sirloin Served With Avocado and Mash

Winter is almost here and that means it’s time for hearty food that you can prepare easily in the comfort of your home. Is there anything heartier, healthier and packed with nutrients than seared sirloin served with avocado chimichurri with mash? If you’ve been looking for a new recipe to try, Food Editor  Thilivhali “Meals with Mash” Mugwena shared her mouthwatering recipe with MH.

Mashed Potatoes

Ingredients
  

  • 5 medium potatoes peeled and cubed
  • 500 ml Water hot
  • Salt as needed
  • 40 g Salted butter

Instructions
 

  • Boil potatoes in salted water until soft, then drain any excess water. Mash the potatoes, add butter, and continue mashing until the butter has melted and the potatoes are smooth and fluffy.

Seared Sirloin

Ingredients
  

  • 2 Sirloin fillets
  • 150 g Salted butter
  • 1 Spring Fresh Rosemary
  • 1 Tsp Salt and pepper
  • 2 Tbsp Worcestershire sauce

Instructions
 

  • Rub steak fillets with Worcestershire sauce then season with salt and pepper. Preheat the pan and heat oil on high heat. Sear the steaks starting with the fat side. Add butter and rosemary then cook each side for 3-4 minutes. Allow the fillets to rest for 2 minutes before serving.

Avocado Chimichurri

Ingredients
  

  • 2 Garlic cloves minced
  • A handful of fresh parsley minced (lower cases to be used where highlighted please)
  • 2 Fresh chillies minced
  • Salt and pepper as needed
  • 1/4 Cup avocado or olive oil
  • Juice of 1 lemon
  • 1/2 Avocado cubed

Instructions
 

  • Mix all the ingredients in a bowl then stir until everything is well combined. Serve immediately or leave the chimichurri to rest for at least 30 minutes before serving for a much more intense flavour.
