Avocado Chimichurri

Ingredients
  

  • 2 Garlic cloves minced
  • A handful of fresh parsley minced (lower cases to be used where highlighted please)
  • 2 Fresh chillies minced
  • Salt and pepper as needed
  • 1/4 Cup avocado or olive oil
  • Juice of 1 lemon
  • 1/2 Avocado cubed

Method
 

  1. Mix all the ingredients in a bowl then stir until everything is well combined. Serve immediately or leave the chimichurri to rest for at least 30 minutes before serving for a much more intense flavour.
