Tripe has a rich heritage in many South African households, treasured for its unmistakable taste, cultural significance and culinary comfort. Woolies’ ox tripe, designed to suit the dynamic lifestyles of contemporary families, can be ready in less than 45 minutes with minimal fuss. Beyond being a useful source of protein, tripe is loaded with essential nutrients. Scientists have found that it can benefit a healthy diet, as long as it’s enjoyed in moderation.

Curried Tripe

The woolies ox tripe is slow cooked in a rich beef stock to ensure the best flavour, tenderness and succulence. Ready to be heated.

Ingredients
  

  • 2 T canola oil
  • 2 medium onions chopped
  • ½ green pepper chopped
  • 2 medium potatoes cut into 1.5 cm cubes
  • 2 T Woolworths medium curry powder
  • 1 clove garlic crushed
  • 1 t paprika
  • 400 g can Italian crushed tomatoes
  • 1 kg Woolworths slow-cooked ox tripe
  • Sea salt and freshly ground black pepper to taste
  • 2 T smooth apricot jam
  • 3 x 410 g cans Woolworths samp and beans heated

Instructions
 

  • Heat the oil in a saucepan over medium heat and sauté the onions, green pepper, and potatoes for about 8 minutes.
  • Add the curry powder, garlic, and paprika and cook for a further 5 minutes, stirring frequently to prevent the spices from catching.
  • Add the tomatoes and cook over low heat for 5 minutes.
  • Add the tripe, mix, season with salt and pepper, and cook over low heat for about 30 minutes.
  • Lastly, add the apricot jam and check the seasoning.
  • Serve hot with pap, samp, or steamed bread.
