Thick-Cut Sirloin Steaks With Bacon And Blue Cheese Butter

Your Father’s Day steak recipe, sorted

What you’ll need

1 stick salted butter at room temperature
2 tbsp bacon fat (save from your next batch of bacon)
2 tbsp crumbled blue cheese
2 tbsp thinly sliced spring onions
Salt and freshly ground pepper
1 top-sirloin roast (2 to 3.5 kg), cut into steaks

How to do it

1 Preheat the oven to 180°C. In a bowl, combine the butter, bacon fat, cheese, and spring onions. Season with salt and pepper. On a piece of cling wrap, roll the mixture into a log. Put it in the freezer.

2 Season the steaks with salt and pepper. Heat two heavy ovenproof pans on high. (Open the windows and turn on your stove’s fan.) When they’re blazing hot, add one or two steaks to each pan; sear until a crust develops, 2 to 3 minutes on each side.

3 Transfer the pans to the oven and cook to medium rare, 5 to 7 minutes. Slice the butter into 1 cm thick rounds, place them on the steaks, and let the meat rest 5 minutes before serving.
