Ingredients
For the meat sauce:
- 500 g lean ground beef
- 1 onion finely chopped
- 2 cloves of garlic minced
- 1 green bell pepper finely chopped
- 1 carrot grated
- 1 can 400g chopped tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
For the “pasta” layers:
- 2 large zucchinis thinly sliced lengthwise
- 1 large eggplant thinly sliced lengthwise
- Olive oil for brushing
- Salt and pepper to taste
For the cheese sauce:
- 250 g cream cheese
- 250 g cottage cheese
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 180°C.
- In a large pan over medium heat, add the ground beef and cook until browned. Drain any excess fat.
- Add the onion, garlic, bell pepper, and grated carrot to the pan. Sauté for a few minutes until the vegetables soften.
- Stir in the chopped tomatoes, tomato paste, dried oregano, dried basil, salt, and pepper. Allow the sauce to simmer for 10-15 minutes, stirring occasionally. Remove from heat.
- While the meat sauce simmers, prepare the “pasta” layers. Lay the zucchini and eggplant slices on a baking sheet. Brush them lightly with olive oil and sprinkle with salt and pepper. Bake in the preheated oven for about 10 minutes until they become slightly tender. Remove from the oven and set aside.
- In a separate bowl, combine the cream cheese, cottage cheese, eggs, grated Parmesan cheese, salt, and pepper. Mix until well combined and smooth.
- Grease a baking dish with a little olive oil. Begin assembling the lasagne by spreading a thin layer of the meat sauce on the bottom of the dish.
- Place a layer of zucchini slices over the meat sauce, followed by another layer of the meat sauce. Continue layering with eggplant slices and the remaining meat sauce, alternating until you run out of ingredients. Ensure the top layer is the meat sauce.
- Pour the cheese sauce evenly over the top layer of the lasagne, spreading it with a spatula to cover the surface completely.
- Bake in the preheated oven for 30-35 minutes, or until the cheese sauce is golden and bubbling.
- Remove the lasagne from the oven and allow it to rest for a few minutes before serving. This helps the layers set and makes it easier to slice.
