Dressed Olives

Sometimes the simplest snacks are the most satisfying. Lemon, fresh herbs and extra-virgin olive oil transform a bowl of olives into something bright, savoury and ready to serve in minutes.

Ingredients
  

  • 300 g Nocellara olives or olives of your choice
  • 2 Tbsp extra-virgin olive oil
  • Grated zest of 1 lemon
  • Juice of ½ lemon
  • 1 Tbsp finely chopped fresh chives
  • 1 Tbsp finely chopped fresh parsley
  • Salt and freshly ground black pepper
  • Maldon salt for serving, optional

Method
 

  1. Combine all the ingredients, except the salt and pepper, in a bowl large enough to toss everything together.
  2. Season lightly with salt and freshly ground black pepper.
  3. Serve immediately or store the olives in the fridge to allow the flavours to develop.
  4. If refrigerated, remove the olives from the fridge a few minutes before serving. Good-quality olive oil can solidify when chilled, so this will give it time to return to its usual consistency.
