Ingredients
  

  • 1 Cucumber, medium
  • 1 tsp Parsley, finely chopped
  • ¼ tsp Basil, finely chopped
  • ½ tsp Chives, finely chopped
  • ¾ cup Low-fat, low-sodium cottage cheese

Method
 

  1. Cut the cucumber in half lengthwise and scoop out the seeds from each half.
  2. Mix the herbs and the cottage cheese together and spoon the mix into the halves.
