Method
- Cook noodles according to package instructions and set aside.
- Heat oil in a pan over medium heat, then sauté garlic and ginger until fragrant.
- Stir in peanut butter, sambal oelek, and hot water until smooth.
- Add soy sauce and honey/agave, then simmer gently.
- Toss in the noodles, coating them thoroughly with the sauce.
- Add vegetables and mix through evenly.
- Serve topped with shredded cabbage, chopped peanuts, coriander, and lime wedges.
